Icewine – or ‘Eiswein’ – is a type of frozen grape juice, made from grapes that have been harvested and pressed but not fermented. It can be produced in any region where there are cold winters to freeze the grapes on their stems before they ripen fully. The resulting product has an intense flavour due to its high sugar content. Icewines tend to be sweet wines with low alcohol levels; some examples include those from Alsace, Austria, Germany, Hungary, Italy, Slovenia, Spain, Switzerland and Ukraine.
